DIY Recipe: Red Velvet Cake Truffles
Give these easy truffles a go! They are a perfect treat for Valentine's day, but just as good for any occasion or if you simply want to make a sweet treat!
Ingredients:
- 1 box red velvet cake mix, plus ingredients listed on the box to prepare the cake
- 1 (8 oz) package cream cheese (1/3 less fat), softened
- 1 (12 ounce) package milk, dark or white chocolate chips
- 2 teaspoons vegetable oil, optional
Step 1:
Prepare the cake according to package instructions, like you normally would. Let cool completely before moving on to the next step.
Step 2:
Use a fork or your hands to break up the cake into small crumbs into a large bowl. Add softened cream cheese and knead with your hands until the cream cheese is fully mixed in.
Step 3:
Roll into 42 cake balls (about 1 heaping tablespoon per ball) and place on a wax paper-lined baking sheet. Place the baking sheet into the fridge to chill while you prepare the chocolate.
Step 4:
Pour your chocolate chips into a heatproof bowl and heat in the microwave until melted completely. Add oil, and continue to stir. Take the cake balls out of the fridge and place a cake ball one at a time into the chocolate, coating it completely (use a fork/spoon to help coat it). Repeat this step for all of the cake balls, placing them on the baking sheet when coated.
Step 5:
Pour leftover melted chocolate into a small ziplock bag, cut off one corner and pipe melted chocolate in desired design on top.
Step 6:
Return truffles to the fridge for 15 minutes to cool until truffles are set. Enjoy!
